The Eternity Juice Bar sits in the back of an organic and all-vegan (aside from its supply of honeys) grocery store not far from Howard University. The menu, for taking out or to be sampled at one of the tables grouped around a chill cabinet display of salads, is dominated by raw vegetable confections. Tofu-seaweed salad (marinated tofu, seaweed and sesame oil with herbs and spices) and mung bean salad (arami, sesame oil, liquid-aminos and sea vegetables mixed with bean threads) are among the less familiar.
